On January 3, 2003 True Confections was born, but the idea had been gestating in my heart and mind for years. In 1999, after graduating from the Culinary Institute of America and 20 years of professional baking experience, I finally decided to start a business of my own. The vision I had in the beginning, and still have now, is to make everything fresh and all natural with the highest quality ingredients I can find.
Living in the Mountains—The Grove Arcade
I moved to Asheville, North Carolina in 1988. It is a beautiful city, with rich scenery and an expressive culture. Nestled in the heart of Asheville’s well-preserved, historic architecture lies the Grove Arcade building. The Grove Arcade opened in 1929 and was an incredible collection of locally owned and operated shops, a center for commercial and civic life. Unfortunately, the Federal Government claimed the building in 1942 and evicted all current tenants. In 1997 the Grove Arcade Public Market Foundation acquired the magnificent building and began plans to renew its’ community spirit once again. With a history of supporting local small business owners and a perfect downtown location, I knew the Grove Arcade was where True Confections wanted to be.
